I currently squat low bar style, flat shoes (converse) medium stance (feet just outside shoulder width)

I notice a lot of people doing both high and low bar squats in the week and wondered what peoples opinion of high bar squatting as assistance is and the benefits? Is it more to develop quad strength? How would you throw them in as assistance

I do paused high bar, before deadlift session. Nothing too taxing, nice warm up for deads too.

I try and do them with no belt, but will add it here and there.

I much prefer doing high bar squats, more comfortable on my back and feel more legit. But obviously not as strong as low bar.

Highbar will usually be a bit easier on your body in general.. and thus allowing you to add some volume to your lowbar squatting. For me it seems to carry over better to deadlifts as well.. not something one should prioritize too close to a competition but nice for building strength in the "off season" whatever that is..

what would be the ultimate squat style for deadlift carryover (sumo and conventional)?

oly squatting seemed to carryover to my sumo very well.

I re-injured my ACL at the end of 2013. So Rehab for my quad weakness this last year was a squat assistance workout separate from squat/deadlift day. The i'm still doing the workout and it basically consists of front squats, Olympic squats, then bit of a mix between leg press, leg extensions and lunges.

seems to have helped bring things back up as i was basically good morning my squats with lack of quad strength.

I do 80-90% of my squat volume high bar and front squats. Then when I go heavy for PRS is switch to low bar and widen my stance. High bar is better for overall quad and glute strength because the bar position forces the lifter into a more upright position and improves depth which results in the quads having to do more work. This strength then carrysover well for me to low bar where the back has superior leverage and can contribute more to the lift

I think the best way to train squats is using high bar and fronts to build muscle and strength for most of your training. Then use low bar to demonstrate it.
