Been trying different cuts of Pork lately. Shoulder, leg, and loin roast slowly. So far the leg is my favourite I think. The loin, despite being the most expensive, was disappointing. Any tips on what the best meat is to roast, and how best to do it Drew etc? Happy

loin is too lean to roast slowly, you need a high fat % to keep the meat moist and tender. thats why leg and shoulder worked well, belly is also a very good and very cheap cut to roast, very high in fat but thats what gives it flavour

loin i would roast to medium (its cool to do this nowadays with pork)or pan fry or even poach

as for beef, rib is my favourite roast, always buy it bone in (as for any roasting joint, itll add cooking time but also flavour). rib shouldnt be done slowly though, i like to brown it in a pan then roast it rare. its expensive but makes a great show. short ribs however are great roasted slowly and you get loads of fat off for cooking with, itll make some of the best chips/yorkshire puds/roast IMO

if your going slow dont forget about shin of beef and ox cheek in stews as theyre awesome, the cheek can be tricky to get hold of (or at least i struggle) but its great eating

Cheers Drew. Yeah, the loin was a lot quicker, but no where near as nice as the cheaper cuts. Cheap is good, tasty is good, cheap and tasty is even better! Happy

meat only has so much flavour, fat is where the joy is, fattier something is the tastier

Cooking a sausage casserole.
1 packet sausages, cooked then cut up into chunks
2 tins chopped tomatoes
1 tin chickpeas
2 onions and 2 cloves of garlic, finely sliced then softened
2 peppers, softened
2 carrots, cut into cubes and softened
Salt, black pepper, mixed herbs, black pepper, cayenne, black pepper and black pepper to taste. Smoked paprika would've been nice but I don't have any.
